Could Interfacial Concentrations of Non Ideal Liquids Present Opportunities?

Evidence exists that non ideal liquid mixtures in repose present dramatic composition changes at the interfaces of gas/liquid or liquid/liquid systems.  How can this behavior be explained and would it have an effect in the analysis of mass transfer in liquid extraction and gas/liquid systems?
